Boudin

Material:

  • 3 cups water

  • 1 1 / 2 cup white rice

  • 1 1 / 2 sheet. pork roast (boneless)

  • 2 medium white onion

  • 1 / 2 pig liver

  • 5 green onions chopped

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon red pepper

  • 1 teaspoon Tabasco


How to Make

  1. Place the pork roast in the container. Cover with water, and bring to a boil. Skim off the surface, lower heat, and allow it to boil for one hour.

  2. Do the same for the liver, in a separate container.

  3. Drain the container. Save 1 cup liquid from pot roast.

  4. Cook rice in rice cooker with 3 cups of water, according to the directions on the package.

  5. Use a food processor to cut the meat. Add onion as you go along. Do not do this. You do not want to end up with pasta.

  6. Place 1 cup of liquid from the roast that you saved into a large bowl. Add all ingredients (including rice and meat mixture) this. Blend together until consistent.

  7. Stuff the mixture into a sausage casing.

  8. Serve
